For some reason, I have never been satisfied with my pancakes. They always come out too doughy and heavy. Throughout the years, I have tried many versions from scratch without that melt-in-your-mouth success. My mother and I recently tried ricotta pancakes with a recipe posted on the epicurious.com website. Wow! We made some plain and some with blueberries. Salty prosciutto is obligatory! We served it for dinner. Bon appétit!
