Mr. Food featured this on one of his television spots a few weeks before he died. I've always liked Mr. Food, he was so upbeat and enthusiastic about cooking. I met him some years ago and he was the same in real life as on TV. A genuine culinary legend.
Other than with pot roast or something similar, I had never roasted vegetables until now. It was easy enough. I lined the pan with foil to make cleanup quick. I used one large acorn squash and it almost filled a 9x13-inch pan.
How did it taste? Delicious! I will make this every fall when acorn squash are available.

Roasted Acorn Squash (LINK to Mr. Food website recipe)
1/3 cup vegetable oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 acorn squash, cut into chunks (I used 1 large squash)
1/4 cup maple syrup
Preheat oven 400 degrees. In a large bowl, combine oil, salt, and pepper; mix well. Add squash to oil mixture; toss to coat. Bake 50 to 60 minutes, or until tender. Drizzle with maple syrup and serve.
