I love crab cakes! I try to order them at least once anywhere I can find them...

There is a place here in Hilo where they feature crab cakes Benedict on their menu, but after ordering once, I now ask for just the crab cakes with poached eggs and the Hollandaise sauce...skip the rest of the stuff they serve it on (English muffin, spinach, tomato, etc...)

I like mine naked except for the condiments shown. Once they put Hollandaise
on the sandwich all you taste is the sauce.

No, not with this one, since I use the sauce over the poached eggs...

The best recipe I have followed for making the crab cakes myself is one by Pat Conroy, the author of the Great Santini, The Citadel, and other great stories located in SC...
